Pachamanca es una comida tipica del Peru preparada a base de piedras calientes con carne de cordero, cerdo, pollo, cuy bien macerados con hierbas tradicionales de los andes peruanos, además de papas, habas, choclo tierno como el de la foto que es algo dulce, humita que es algo asi como un tamal dulce sin carne y con pasas. Todo esto es enterrado y cocido solo con el calor de las piedras.. el momento del desenvoltorio todos los aromas emergen en forma espectacular.
Pachamanca es una palabra quechua que signfica "olla de barro" se deriva de las dos raices "Pacha" tierra y "manca" olla. Este es un plato que ha existido con algunas variantes, desde el tiempo de los Incas.. que rico comian =D
Pachamanca is a traditional Peruvian dish based on the baking, with the aid of hot stones (the earthen oven is known as a huatia), of lamb, mutton, pork, chicken or guinea pig, marinated in spices. Other Andean produce, such as potato, green lima beans or "habas", sweet potato, and occasionally cassava, as well as ears of corn, tamale and chile, is included in the baking. The word is made of two Quechua roots: "pacha" and "manca", meaning "earthen pot" (cooking vessel).
This cuisine has existed since the time of the Inca Empire, has evolved over time, and its consumption is now widespread throughout modern Peru, where regional variations have appeared in the technical process of production, but not in the ingredients or their baking.
